We can all relate to how hard it can be to find a breakfast recipe that is both healthy and delicious. Factor in the time constraints and general chaos of life – whether that's working, raising a family or living each day to the fullest – and the list of possibilities only gets shorter. Easily customisable for the gluten-free among us and anyone following a non-dairy, vegan diet, this breakfast recipe will have you excited about meal prep. Find the full recipe, below.
Tiramisu Overnight Oats
Serves 2
Ingredients
100g rolled oats
2 teaspoon chia seeds
1x60ml shot of espresso coffee
50ml maple syrup
350ml milk of choice
1/4 teaspoon salt
100g Greek yoghurt
1 tsp vanilla extract
2 teaspoon cacao nibs
1 teaspoon cacao powder
Method
- Place the oats, chia seeds, espresso, maple syrup, milk and salt in a large bowl and mix well to combine. Cover and refrigerate to set overnight.
- Remove from the fridge in the morning and stir well. In a separate bowl, mix together the yoghurt and vanilla extract.
- To assemble, spoon a few tablespoons of the overnight oat mixture into two glasses, followed by a few tablespoons of yoghurt. Repeat once more, then finish with a light dusting of cacao powder and a sprinkle of cacao nibs.
