Ginache Gin Sour
According to Never Never: "the name says it all. Beautiful fresh acidity is balanced by the candied apple and fresh raspberry with a beautiful creamy texture that tastes even better than it looks. For a slightly dryer serve, add a tad more lemon juice."
Ingredients
60mL Ginache Gin
30mL Lemon Juice
20mL Sugar syrup
1 Egg White
Orange twist to garnish
Method
1 Add all ingredients in a cocktail shaker without ice to emulsify egg whites.
2 Add ice and shake hard.
3 Strain into a rocks glass and garnish with an orange twist.
Ginache Charlie Chaplin
According to Never Never: "Originally a pre-Prohibition cocktail, and largely forgotten in modern times, this cocktail is a rich and indulgent mixture of glamorous flavours. Named after the famous actor Charlie Chaplin, this cocktail was invented in New York City's Waldorf Astoria hotel."
Ingredients
30mL Ginache Gin
30mL Apricot Brandy
30mL Lime Juice
Orange or lime twist to garnish
Method
1. Shake all ingredients and strain into a chilled cocktail glass
