The Yallamundi Rooms will be transformed into an immersive celebration of nature and art. Stylist Fiona Rae collaborates with artists Emma Davies and Katarina Wells, showcasing intricate vessels, organic sculptures, and sea-inspired ceramics that complement the evening’s theme.

From January 17–20, 2025 (from 6:30–10:30pm) the Yallamundi Rooms will host this exclusive event, bringing together two renowned chefs for an unforgettable dining experience.

What’s on the menu?
Dan Hunter of Brae and Danielle Alvarez, culinary director at the Sydney Opera House, will present a six-course menu ($450 per person) celebrating sustainability and nature-inspired flavors. Dishes include Murray cod with crustacean butter, fennel-rubbed pork loin, and strawberry gum ice cream with frozen passionfruit.
To accompany the meal, guests can opt for classic ($265) or premium ($450) wine pairings, featuring standout Australian labels and biodynamic European selections. For non-drinkers, award-winning bartender Lee Potter Cavanagh has crafted a non-alcoholic beverage pairing ($195), featuring tisanes and tinctures made with Australian ingredients.
