The wonder of the holiday season has been made a little dimmer by the news of Australian chef Bill Granger's passing at just 54 in London today. Granger's storied career spanned more than three decades – including writing 14 cookbooks, producing five television series and being awarded the Medal of the Order of Australia back in January of this year. He also operated 19 restaurants over those years, across Sydney, London, Greater Tokyo, Osaka, Fukuoka and Seoul – including his eponymous Sydney institution bills cafe.

As we look back at the Australian chef, food writer and restaurateur's life and career – we look to celebrate the indelible mark he left on Australian cuisine the only way we know how: through the art of cooking. Any Sydney foodie worth their salt will be able to tell you about the notorious pancakes that have held prime real estate on the menu at bills cafe since its opening. They even graced the first-ever cover of Delicious Magazine back in 2001! The original buttermilk recipe was updated with ricotta in recent years, and is easily one of Granger's best.

Granger was the king of Aussie breakfasting and truly changed the landscape of what an Australian breakfast looks like. So, it's only natural that we'd take his cues when it comes to perfecting the humble scrambled eggs.

Tiramisu is truly one of the most versatile desserts out there – suitable for just about every season and occasion. Creamy, fluffy and light, but with a kick of Marsala and espresso, it's little wonder the Italians have brought this dish to the world stage. Granger's version keeps things classic – but with a little grated chocolate on top for good measure.

For some winter fodder, we'd try our hand at Granger's chicken noodle soup. Like a hug-in-a-bowl, it's never a bad time for some comfort food and this take on the classic chicken noodle is delightfully simple but with a couple of Granger's signature twists.
